Nourishing Nettle Pesto

Nettle packs a big nutritional punch with its vitamin, mineral and antioxidant content. This herb is often used as a tonic, meaning it supports, strengthens and tones. Nettle is tonic for a healthy cardiovascular system, blood sugar regulation and reproductive system. It is also used to help ease seasonal allergies. 

Nettle is a plant demanding respect and care when harvesting. It’s full name, Stinging Nettle, warns of the prickly, stinging hairs along its leaves and steams. Always use gloves with harvesting, drying and cooking. Once the herb is done being cooked it no longer stings.

Ingredients:

8 cloves garlic, chopped
2 leeks, chopped
1 c. fresh nettle or ½ c. dried
1 bunch of fresh parsley
1 bunch fresh cilantro
1 ½ c. olive oil (or more to get everything to blend)
½ c. roasted pumpkin seeds
Juice of 1 lemon
2 tbsp Savory Herb Spice Blend
2 tsp. salt

Directions:

  1. Saute garlic and leeks until slightly golden. Set aside to cool.

  2. Steam nettles and blanch in cold water.

  3. Combine all ingredients and blend until smooth.

  4. Savor!
